Recipe Inspiration: Greek Roast Potatoes with a Lemony Twist

Greek Lemon Roast Potatoes
Potatoes cut into 1.5cm thick slices
- 50g melted butter
- 2 tbs olive oil
- 1 cup chicken or vegetable stock
- 1/4 cup fresh lemon juice
- 2 tps lemon rind
- 3 garlic cloves
- 2 tsp fresh or dried oregano leaves
Preheat oven to 200C/180C and drizzle a roasting pan with the olive oil.
Place potatoes in the pan, add the melted butter and toss through the oil and butter. Once coated, arrange into layers and roast for 30 minutes.
Mix together stock, lemon juice, rind and garlic.
After 30 minutes, turn potatoes and rearrange layers for even cooking. Add your stock mix and bake for a further 30 minutes until stock has reduced. Sprinkle with oregano and serve.
