Recipe Inspiration: Mexican Grilled Corn
A traditional favourite, grilled corn - amplified!

The humble corn on the cob has been given a tangy twist. Loaded with a creamy sauce and sprinkled with cheese, these deliciously smoky and spicy corncobs make the ultimate side dish.
Mexican Grilled Corn
- Ingredients:
6 corn cobs- 1 lime cut into wedges
- 1 tsp of cayenne pepper for spice rub
- 2 tsp of smoked paprika for spice rub
- 1 tsp salt flakes for spice rub
- 1/2 cup finely grated parmesan
- 1/2 kewpie mayonnaise
- 2 tsp of smoked paprika for mayonnaise
Simple Steps:
Cook the corn cobs as normal in boiling water. Grill on the BBQ until slightly charred.
Make smoked mayonnaise by combining Kewpie mayonnaise and smoked paprika in a bowl and set aside. Make spice rub by combining spice rub ingredients in a bowl, mix well and set aside.
To serve, brush corn with mayonnaise mix, sprinkle over spice rub, add cheese and serve with lime to squeeze over before devouring.
